NURB's Modelling is a modelling technique that is a mesh with no vertices, faces or edges. Instead they has a smooth surface. To do these it has multiple curves connecting to make a smooth face (surface).

The NURB's tool has slimier aspects to the pen tool in other applications like Illustrator and Photoshop. You can curve it with ease.


Polygonal Modelling,

Polygonal Modelling or also known as Extrusion Modelling is when a 2D shape is used to create a outline of drawings or photos. This modelling technique is rather simple and is used in the line tool in 3D modeling software due to the ease of use.

This is commonly used to create faces on a model with ease because it's simple and can be used to make complex objects with simple shapes.
